Disable DSS Transitioning and Band Steering in your AP device settings. Also turn off the 2.4ghz radio for wifi6 and only enable 5ghz.
Ran into this issue last night and with lots of trial and error figured out it was these settings. Wifi6 is now fast and stable with no connection drops or flopping as I like to call it.

In USA here. I have direct acknowledgement from Samsung about the issue. They say that the issue is going to resolved by the July update. Fingers crossed!

Chatted with support which was useless as expected. I had already reset my connection settings and they told me to try deleting app-by-app in safemode despite this being a day 1 issue for me and lots of posts online. I was finally told to drive 3 hours to a service center where they'll "take care of it immediately". lol!
Glad to see that MrMunster was told by Samsung that we can expect a fix in the July update. Fingers crossed!

Yep I know I installed it last night and still having the issue ! The thing is it's definitely software as it'll be absolutely fine for a week or so and then for a few days it'll be terrible again to the point I want to snap the phone in half ! It's definitely not my WiFi like Samsung suggests as all my other appliances in the house work no problem ! I was giving this update the final chance but still it hasn't fixed it, I'm flogging the phone to get something else, had enough of Samsung ! I don't judge a company for making mistakes, I judge them on their capacity of solving said mistakes and in this case they have been abysmally poor ! I know Samsung is not gonna give two **** about it but that's me done with Samsung now !

I had the same problem before. Checked through all the settings and went into intelligent WIFI and turned off "switch to mobile data". After that, both wifi 6 and wifi 6E have been stable, so check if it helps you too!

Me and my wife both have the same problem (s23 ultra), not solved with the july update. I opened a ticket with Samsung and after the first answer (reset settings bla bla bla) I didn't answer again. The usual useless support. It is a known bug and they are still not able to solve it...incredible!
