I don't agree. I didn't have any problems till recently (1 or 2 weeks ago). No or very slow connection, dropping to 5g, then reconnecting, same thing. It was gone when i turned off Wifi 6 in my router. I've turned it on again to see if the problem persists. After turning on wifi 6 again this morning it happened at least once more.

(Update).. One day I had an update to my Eero device setup pop up.. After downloading and while installing the update.. in one of the steps I was asked if I wanted to link my Eero wifi 6 account with my Alexa Echo device. I went on to connect my Eero device to my Amazon Echo Dot device, slash, Amazon account. And Voila! No more internet connection problems. Been working flawlessly ever since. 🤔
I myself am with a Samsung Galaxy S23 Ultra and I am also with the eero wifi6 hookup. I'm like you and others who are having the same problem with the wifi6 connecting but with no internet issue. I think it's an issue within either the hardware or software of our Samsung devices, as my wifi connects perfectly whenever I'm at my friend's house whom has regular wifi. Whenever I visit my friend's house, my s23 ultra connects to her wifi automatically without any problems and works flawlessly for days on end. Then on my return home, my s23 ultra connects to my eero wifi6 automatically then quickly drops internet and remains unstable onwards. Forcing me to toggle off my wifi altogether and use my phone's data instead. As others have mentioned, it seems that anything over 80mhz is too much for the s23 ultra to handle/process. Please, Samsung, fix the issue with connecting to wifi6, as I do love my s23 ultra for everything else it does good/great on. But I'll also love to be able to use the eero wifi6 internet service that I pay to use for ALL of my wifi enabled devices in my home. As every other device connects and works flawlessly with my eero wifi6 home internet service, except my new singled out s23 ultra phone.

I am also having the same issue, sometimes it is really frustrating.
Hope Samsung fixes it in the next update.

Having the same problem with a Galaxy S23 Ultra and my UniFi network. No workable solution.
This is unacceptable.

OK, I think I fixed mine.
I went into Developer options and made 4 changes under Networking settings:
1. I disabled "Mobile data always active"
2. I disabled "Wi-Fi non-persistant MAC randomization"
3. I disabled "Wi-Fi scan throttling"
4. I disabled "Wi-Fi safe mode"
Networking settings which worked for me
After that I restarted the access point (just because I had tortured it a bit before in trying to get this phone connected) .
Finally, I stopped and restarted WiFi on my Galaxy S23 Ultra and it connected using WiFi 6.
The results are below:

Ookla Speedtest results
30 minutes later, the connection is still stable, using WiFi6.
Hope this helps solve the issue for someone. Not sure if only one or a combination of the settings were responsible, but I set it how I wanted it for me and it seemed to do the trick.
Good luck!

17 hrs later, I was roaming between access points and it dropped to 2.4Ghz WiFi 4 and stayed there when I was back in range. Went back into Developer mode and disabled WiFi Safe Mode. Turned phone WiFi off, then on and it went back to 5Ghz, WiFi 6.
I edited the first post to reflect "disable WiFi Safe Mode".
