I am considering purchasing this model  SM-S711BZADEUB, can anyone advise if it is OK for the UK, ie will the apps work? including payment and banking apps?

I would always recommend being cautious when purchasing from Amazon or any site that isn't a retailer such as Samsung, John Lewis, Argos etc.

The reason for this is that sellers will sell products that aren't manufactured in EU and have imported the product from a different country.

You simply won't have a EU warranty. If found that it's a non-EU device, Samsung UK will deem ANY repair as out of warranty and will be charged.

Assuming they can even locate the parts needed and are trained to work on non-EU models.
