Hi, I read something about that on the 9to5google website also.

I downloaded it and seem to be having issues with it the voice breaks up when it's talking back to me

Yeah just talking to the device & let it keep replying, the voice will stop breaking up after a few seconds it did for my watch.

  can anyone assist? I still can't seem to get it to work despite it thinking it is installed yet 'apps' on the watch doesn't show it

Have you looked in the My Apps section on the Play Store on the watch itself? It comes up as an update

All I done was went to apps, search Google Assistant, it said was already installed so choose open. Then it required final setup via phone.
Not had to sideload or mess about getting it working

True, I did uninstall it then reinstalled it now its working how it should.
