Yes you can as long as the USB plug fits in your phone. I use multiple chargers on my Note 10+ and my phone is fine 5W for charging over night 15W in my home office 25W at my works 45W for when I'm in a hurry

Turning it off should stop the phone from installing updates the phone will probably still download the update and you'll have a pesky notification that will never go away but the phone shouldn't update automatically

Yeah a carrier is another name for a network if your phone has a custom carrier csc (country specific code) your network may block access to the beta due to the potential stability issues

I had the same problem Alarm would only vibrate but not make any noise even though I had an alarm sound set for it. I found the cause was this option was turned on in the clock settings if it's on turn it off and it should fix it
