@Devongirl1: It should be possible to access your Voice Assistant settings by pressing the Home button on your remote > Menu > Settings > All Settings > General & Privacy > Voice > Voice Assistant > Select which Voice Assistant you would like to control your TV.

If you're unable to locate Voice Assistant via the steps above, please can you provide a photograph of the menu options, so I'm able to gain a better understanding of what you're seeing?

@Confused_098: That's odd, as this is the path that is provided in the user manual, although it does state that the feature may not be available depending on your model or geographical area. As a workaround, try pressing and holding the microphone button at the top of your Smart Remote, and a pop-up should appear which prompts you to set up Voice Assistant. If the issue persists, then it is likely that the feature is not available on your TV.

The CU7100 series doesn't have any built-in Voice Assistants such as Bixby or Alexa. It can work alongside AI speakers such as Alexa Echo. All you would need to do is add the SmartThings skill to your Amazon app on your phone.
