Thanks for the solution but in this video, Its clearly mentioned that its risky as it can destroy your phone. So why I will take that much of a risk for Samsung's blunder in this new update.
They made this update and now they are responsible to solve our problem as I was not begging for their phone to give it to me for free, I purchased it.
We all gave our money to them and now they have to fix our problem. This is their responsibility.

The problem is u cannot downgrade if sw in your phone is higher versionwhile downgrade version is lower. I already go through this. Odin give me error as me comment in the video.

Thank you all for your great support and for sharing potential solutions.
Regarding the YouTube solution mentioned above, please is good to be aware that in some situations, it could be a real disaster and damage your phone.
However, I have tried multiple times to update my Samsung S21 Ultra 5G using different firmware, but my phone is still frozen but not completely broken.
As mentioned by someone else, you cannot downgrade the firmware version.
My phone (Samsung Galaxy S21 Ultra 5G SM-G998B) was updated through an automatic update pushed by Samsung to the latest UI6.1 (11/RP1A.200720.012/G998BxxSBGXDH).
The fifth character from the end is the Bit/Sw rev number (in my case B).
After looking on the SamFw website, I noticed that this is the last version for multiple carriers worldwide, so you should carefully select the correct version and firmware/file.
The files from the firmware update are:
- AP: system partition with recovery and other components
- BL: bootloader
- CP: modem
- CSC: contains customised settings, system configurations, localisations and geo-specific things such as the system language, APN settings, and carrier branding
CSC is essential and will cause a complete wipe of your phone's data, while using home-CSC will not reset your phone completely.
In conclusion, if there is a previous firmware with the same Rev/Sw number, you have a chance to repair your phone.
Otherwise, you'll have to wait for the next update from Samsung. In the meantime, I have already switched to Apple, and Samsung should really work hard to change my mind. I was hugely disappointed to lose access to such an expensive phones.

having same issue with S21+, Samsung no help at all, I have now bought Google Pixel will never buy another Samsung product

I bought the phone from Noon store
And while the settings were working, I updated the phone
And it stopped working before I used it.
