New Update UI 6.1 touch screen unresponsive on S21

After installing the latest update on both phones (S21 5G and S21 5G Ultra 512 GB 16 RAM) the touchscreen became unresponsive. I noticed that the date automatically was changed on both phones to 3rd May 16.00.

The only thing that is working are sides buttons. 

I managed to start the recovery console using:
 1. Side button + Volume down to restart the phone
2. Then very quick I change to Side button + Volume up

I wiped the cache partition and also performed a factory reset on S21 5G but unfortunately did not solve the issues. The only change is that the phone is starting the setup (with a padlock locked on top left corner) a new phone but I cannot interact to set it up.

I assume that the main and major issues are with UI.6.1

Is there anything I can do for downgrading the android/UI and recover the information I have on S21 Ultra?

I hope that there is a quick solution as it is so frustrating for having two top phones and to not be able to use any of them. At the moment I'm lucky to have an A70 with older android and UI but I'm thinking of leaving Samsung after many years and products and not buy any other.

Hoping for some official update soon, S21 ultra has had a completely unresponsive screen since updating to 6.1 a week ago.

S21 plus is completely useless now since updating to 6.1 a few days ago. Immediately after updating screen quit responding. Now have to use a computer mouse to do anything. This phone was purchased refurbished through Amazon last October so I'm assuming it has a replacement screen. That shouldn't matter because I paid a lot of money for this phone!!!! Worked perfectly before the update. If I have to purchase a new phone I'm seriously considering leaving Samsung after being a lifelong customer. Such a same they would do people this way.

S21 5G auto-updated this morning.  Touch screen failed to respond to touch. Physical buttons still worked.  Stuck on display saying explore the updates of One UI 6.1.  Couldn't press any buttons by touch.  Had to plug in a USB mouse to proceed.  Touch screen still fails to recognize touch inputs.   Rebooted phone, no positive outcome.  Factory reset the phone, no positive outcome.  Read claims that the Google app needed updating,  followed by deleting Google data and cache.   Rebooted the phone, no positive outcome.  Samsung- you need to fix this abysmal failure to your customers.

One straw to clutch at in this frustrating situation is - S-Pen is responding to the screen. It could make the phone a little usable till the updated patch is available although this is not too likely.

One thing is guaranteed Samsung will be the last phone for many people now. I hope the Samsung stakeholders understand this and try to rectify it.

Samsung will blame user used non original part like other company do like this. Big2 companies use this term to get away.

Mine is new from less than two months ago. Like many other customers the screen was not replaced, nothing was replaced its 100% an original phone from Samsung.
It was working perfectly under 6.0, touchscreen became fully unresponsive immediately after upgrade to 6.1. 
Now it's totally out of order,  waiting for a patch from Samsung since I cannot even downgrade it.

Guys have found a solution - for now with root enabled

IT IS 100% firmware (kernel) issue with samsung - they try to update the firmware of the touchscreen, that fails and they shutdown the touchscree

I've managed to re-enable the touchscreen as root

so basically, the update the Samsung rollout is intentional to turnoff the screen function? if this is true, shame on samsung!
