Is this the same with the date that is shown on your Home Screen, Lock Screen or anywhere else on the phone? Can you send a screenshot of your issue?

@MichaelBirkinshaw: I just checked a Galaxy device running Android 14 (One UI 6.0) and the date format was also in mm/dd/yy for my sent messages. I am currently looking into this for you, and will get back to you with any information I'm able to obtain on the matter.

@MichaelBirkinshaw: I passed your query to our product specialists, and they have also noted that the date format is is mm/dd/yy in their Google Messages app. This appears to be an embedded feature, and cannot be adjusted in the settings. If you head to the Messages app > Tap your profile in the top right > Message Settings, is 'Your current country' set to United Kingdom, or Automatically detected (United Kingdom)? For clarity, the date is still appearing in the US format when this setting is applied, but it is worth checking just in case.

Any update on this a year later?
I'm in Australia and also noticing that while everywhere else on my phone the date format is reading correctly as ddmmyyyy on my text message details it's reading American format mmddyyyy.
So strange.
Hopefully there's a fix for this soon.
