Resolved:
I found the solution to my previous problem in another thread (Samsung Galaxy A51 screenshots issue) :
"You need to press the power button + volume down just once (Without holding). If you hold, it won't work."
From my trusty S7 I was used to long-press both to take a screenshot... Sadly, it is not clearly explained in the documentation.

The solution for me was the difference how long I had to press both buttons:
- S7: Press and hold power + volume down both for 5 seconds -> screenshot
- S24: Press and release power + volume down both (i.e., only press shortly) -> screenshot
- S24: Press and hold both buttons for 5 seconds -> turn-off dialog, or bixby
