I am looking for simple instructions on how to personalise my home & lock screens on my new
phone. I have not found the YouTube videos helpful but maybe haven’t found the right one yet!
Just want the regular , message, WhatsApp, mail etc… icons more conveniently placed. Thank you .

You might not be aware of this (until the first time it occurs), but just like a desktop computer's mouse - with right mouse and left mouse clicking, on Android, we have - short tap and long press - on the screen and on individual icons, to call up different options.
Go into Settings / Home screen to first set up your grid - how many icons left to right and how many columns. ( Search ... Grid, Home Screen) ... and drag and drop what you want where you want.
I use the MS Launcher which allows even more options for the Home screen grid layout.
You'll have a lot of options in Settings / Wallpaper for starters.
This should give you a start. Post what you create and we'll take a look.

Go to your App drawer, long press on the app you want to place on your Home page, press on Add to Home, and then reposition that app to the location you want.
The bottom row of icons on your Home page is labeled the Dock by some.
The icons you place there will appear on every page of your Home page.
To add or remove pages on your Home page, long press on your Home and play around with what then appears. A plus sign, +, will add an additional page to your Home page and the trash can will remove the page in question.
Long pressing on your Home page will also bring up the option to add Widgets.
With One UI 6 we now have the option to layer similarly sized widgets on top of each other. You can then swipe to scroll through the widgets you've layered on each other
Edge panels are also big fun.
Take your time, look at more videos, and I'm sure you'll stumble upon options you didn't think possible.
I like to take an occasional screenshot of my Home pages. It helps on occasion to have a copy to refer to.

Paul, that's a great link, I wish I would have had that years ago when I first started out.
A suggestion, that would be great to be pinned at the top of this section.

Follow the below mentioned steps
Unlock your Samsung Galaxy S23 Ultra and go to the home screen.
Long-press on an empty space to enter home screen editing mode.
Find the apps you want to move and drag them to your preferred locations.
Create folders by dragging one app icon onto another for better organization.
To change the wallpaper, long-press on an empty space, select "Wallpapers," and choose a new one.
For lock screen customization, go to phone settings, find "Lock screen," and explore available options for clock styles and widgets.
Exit editing mode and enjoy your personalized home and lock screens!

Stanley, when you feel even more confident to learn more customizations, consider installing GoodLock (from the Samsung Galaxy Store).
GoodLock is a suite of modules, 20 to be exact, more customizations than you could possibly imagine.
My favorite from GoodLock, is the Home Up module, which zeros in on specific Home page functions.
I like the GoodLock / Home Up / Task Changer / Slim List.
I'll include a screenshot of what I see when I swipe up to see my recently used programs (that are still open) ...
