I don't want to use the gesture mode but I've always had the navigation buttons hidden until I press on that part of the screen. Randomly today it's changed so they are always visible.
How do I hide them when using apps?

In a lot of them. I've set some to full screen mode but that doesn't work either. The navigation buttons are visible on every app now

Good lock app in the galaxy store. Download Navstar will allow you to hide the navigation buttons.

I thought there was a way to hide them until you need them

When you select the Full Screen Gestures the screen is full and you w2see a single bar along the bottom. You can then select more options. This only removes the Nav buttons, so that you use your fingers to get the job done, rather than the buttons.
