If i replacement my screen on my s21 will the fingerprint still work

Providing the screen replacement is performed by Samsung or an authorised Samsung service technician, then it would be safe to assume so. I can't speak to the validity of third party repair shops.

I dont like taking my phones to third party shops because they scam you so much and i rather fix it myslef because i have experience fixing alot of phone

There's no hardware reason why the fingerprint scanner shouldn't work following a screen repair if done to manufacturer spec. If you're able to make that repair yourself, then you should have a fully working fingerprint scanner afterwards no problem. Samsung don't HW brick everything like Apple.
