So … just bought (in the UK) an S25 Ultra and have just found out it’s not a UK spec phone. What exactly does this mean… are there things that won’t work ? Any apps that won’t work ? 
any help appreciated

It means some country specific features like samsung pay might not work. It also means system updates might not work. If system updates do stop working, you can actually buy a pay as you go sim for the country the phone is from, put the sim in, update it, put your sim back in.

Easy way to tell updates have stopped, your security patch level will be multiple months out of date. Hopefully updates continue to work, what breaks is unpredictable.
