To explain a little bit, wifi calling actually sets up a vpn to your cell provider, if your home network or something along the way goes wrong, that can cause issues. You should see the wifi calling icon in the top bar if it's working, no icon means it isn't working. Though if it doesn't connect it should default back to normal calls, not break calling

If it's showing but not working is 1 thing.
If it's not showing and calls still aren't working is equally strange

If the icon wasn't there, that means the phone has detected a problem and knows it won't work.
You seeing the icon means the phone believes it is connected and working. Which makes this a little more complicated

But I personally haven't had any such behaviour that you describe.
Sorry, this isnt a solution, but just to validate that for my S25u in a similar circumstance and my WiFi calling works just fine.
For info I use IDmobile on the three network.
Just as a side note, and maybe drastic action perhaps... but sim only cards with no tie in (30 day rolling) can be got for virtually no costs these days... I.e. a £5 one month... if you feel the need to debug your network with a dual sim test. Depending on which you choose you could consider a voxi (vodafone), id (three), or another for a cheap test. It might also give some facts to EE if you do find that another network WiFi calling works without the connection issues. Just a thought.
Like you say.. it isnt a coverage issue... but maybe the network is having some problems establishing the connection in the first place.
