First thing I'd try is to put the sim in the 2nd slot i.e if it's in sim slot 2 put it in sim slot 1
Phones do not latch onto the strongest signal.They follow the network assigned procedure, hence why it's not uncommon to be connected to a weaker signal than is strictly available.
You could also try resetting the network connection in Settings > General Management > Reset > Reset Network Settings.

I have a S24 Ultra as well, my network is 02. So far I have not had problems with signal. I have not been around a lot since I got the phone. However, it is very common to lose signal. Coverage can be patchy even in the cities. I think that we have one of the worse mobile coverage in Europe.
It could well be a bug on the software in the phone. I can think at least of another case where a user was losing connectivity.
Have you tried putting the phone in flight mode instead of rebooting? Do you ever get 5G?
Did you set the phone with SmartSwitch? Have you tried clearing the cache partition? If no in this support page, Samsung explains how to clear cache.

When booting into recovery mode to clear the cache partition, the phone need to be connected to a computer, USB headset or another phone via the USB port.

Resetting the network settings via settings didn't do anything.
I tried the airplane mode options and yes it does fix the problem instead of having to restart the phone now but it's still an issue because I might not be keeping an eye on my phone to realise I've lost good data signal and am not getting any messages.
I'll try swapping the sim into different slot next. Failing that I'll try the clear cache option.

I have a similar experience. My cell connection keeps cutting out completely. Samsung said its carrier issue. No other phones on this network have the issue. My coworker with an S23U standing beside me doesn't have the issue, same carrier. If I pull down the control center, it says Airplane mode is already activated. After a few seconds it realizes its not. I have to then activate airplane mode and turn it off to get back cell service. This happens when transitioning to wifi also from cell service, but Samsung says it's a carrier issue despite it being wifi too.

I have exactly the same problem since i got the S24Ultra. Previously on S21+ and had no signal issues whatsoever. I lose full signal the majority of the time and have to turn on airplane mode and then off again to get it to try latch onto the network. It might connect for 30s to 1min and then drops off again.
I also have issues with the phone browsing internet pages or listenting to spotify. My old S21+ was much faster on all data browsing and had much better signal too.
I'm pretty unhappy and hope that Samsung recognise this is an issue with the new S24 Ultra and hope the provide some sort of fix asap.

I'm having the same issues and my carrier has already deleted the eSim and established a new, and it didn't help. I've reset all settings, network settings, and factory reset and it didn't help. This is 100% a software bug
