I'm not loyal to Samsung, I've used Pixels and OnePlus devices regularly so it's always Google Messages for me.

Either will do. I think Google's has end to end encryption, but the other person must be using as well. Samsung has a contact tab next to the messages. There is no much to recommend one over the other. You can try both and keep the one you like the best. By the way, toggling from one to the other it is painless.

I come from Pixel and was using Google messages, but it doesn't meet style of Galaxy, so changed my default messaging to Samsung messages and found my inner peace.

Try them both for a few weeks.
I use the Samsung Phone app but prefer Google Contacts.
