The beta version is used until the stable version is released.
It is common practice to do several releases when developing complex software. After adding enough new features to a particular version, the software was released for testing. The idea behind was to catch as many bugs as possible, so they could be fixed.
The first of those was the pre-alpha, then the alpha, the beta, gamma, delta and so on, until the stable or production, But lately we are stuck with Beta 1, Beta N or Perpetual Beta.
In this context, One UI 7 Beta is used during the testing phase, but once all major bugs are fixed and One UI 7 is ready to be deployed, the Beta is dropped. That is why we had One UI 7 Beta 5 a few days ago, adding the fixes caught on One UI 7 Beta 4, but From the 7th of April, there is not going to be any more beta version for One UI 7, at least for the S24 series. After that date, it will be One UI 7.
Of course, the whole cycle will begin again for One UI 8.

The S25 series was not part of the Beta program because it was released with its own stable One UI 7. However, the One UI 7 stable version of the S25 series cannot be used for other models because differenced in the hardware. Hence the Beta for the all other models that were not released with One UI 7.
Some of the functionalities of the S25 series will not be back ported because older hardware might not be able to support them.
One UI 8 seems to be ready very soon-ish. So, there will be a beta even for the S25 series. Of course if any new model is released with One UI 8, it will not be part of the Beta program.
