I just tested on mine. I set the alarm for today and tomorrow, and it shows today's info and after that it shows tomorrow's info. I did it twice and on both occasions it worked as expected. The widget does update itself on the AOD.
Try clearing the cache and data for the clock and see if that helps.

Do you have two alarms set?
By the way, I just tested with two. One for Saturday and Sunday at 9:42 and one for Sunday at 6:00. Again, the widget behaved as expected. I get today's and after I dismiss it, it shows the Sunday's 6:00, not the 9:42.

Did you try clearing the cache for the Clock App? You could also clear the cache partition.
My Clock's version is 12.3.10.47. What is yours?

I can confirm that something is wrong with the widget. If no alarm time has been set today, the next day's alarm time will not be displayed.
But! When testing this, however, you should pay attention to the fact that if you do any kind of intervention around the alarm clock today (change, save, new time data for tomorrow, delete cache), system will already detect it and it seems that everything is fine (for tomorrow). Therefore, the settings must be made at least 2 days in advance, there should be no wake-up time for the next day, and tomorrow you must watch to see if the alarm time for after tomorrow is displayed or not.

Is that normal on Sunday to show nothing, when there is an alarm for Monday, as when there is no alarm for Monday?
And all this just because Monday's alarm is more than 24 hours away from the previous one (Friday)?
