In which gallery app?

In Samsung Gallery - tap on any album, tap 3 dots top rh corner, and tap sort
In Google Photos - tap 'Library'. Tap on any album, tap 3 dots top rh corner, and tap edit. Tap sorting mode

If you're referring to Google photos, it seems to sort itself out after a while. All the metadata should be there...

You can in micosoft's onedrive app not sure about Google Photo's

You download the onedrive app so your gallery photos sync to it.that's where the photos in Gallery backup to as Samsung don't backup your photos now I also use Google Photo's app as well it's much better.

I don't have that option. I'm on a z flip 3. I get edit, create, slideshow and homescreen options only on the 3 dots. 

I just did a huge clearout and my photos are now sorted by the date I restored them from the recycle bin, most recently rescued first.
