I've had my new Galaxy S24 for 2 weeks but this feature isn't working. It just charges fully straight away rather than holding it at 80% until I wake up. What I have noticed though, is when I do wake up the level is at 99%, never 100%. My old S21 had no issues with this feature.

If your phone is within a couple of weeks old.
It goes through a usage learning process and the battery can be a bit inconsistent during this time.
During certain settings, the battery will charge to 100%. It will if left on the charger stop charging until it drops to 95%, where it will top up the charge again.
Maximum setting will go straight to 80% and then stop.

If you go into the settings, battery, tap on Battery protection. Each setting has a short description of what it does

I think it's still learning your usage pattern, on my S24 Ultra it works fine.

Try turning this setting Off and then back On again to see if this helps @xeclectron

The advice I offer is my own and does not represent Samsung’s position.
