I also like my notifications to be minimised @parallel_me_ which is why I use an app called Dynamic Spot.
I appreciate nkt everyone want to use an app however if the current customisation won't allow what we want then sometimes an app is the way forward, along with sending feedback via the Samsung Members App.

You can enable minimized notifications again via a mostly hidden option: https://www.androidpolice.com/one-ui-61-disables-notification-channels/
No clue why the heck Samsung hid this.
Besides that, I second the main topic: it makes NO SENSE to remove the separation for minimized notifications. It just increases the cluttered appearance of the notifications shade!
