I think you are describing the problem I have - but I have it worse. I too have a Z-Fold 5. Swipe up and swipe in from the right achieve 'home' and 'back' ok, but I simply don't have a 'recents' option if my settings are for swipe gestures. When I swipe in from the left I just get 'back' - the same as if I had swiped in from the right.
I'm with the responders who don't much like their phones any more. The screen area is valuable real estate and I don't want to pollute it with unnecessary buttons.

Just seen the reply from Shannon26. Thanks. That sorts the problem for me.

Thank you for that. It worked. I was wondering how to get to my recent apps.

Full credit to poster tbtravels360, but the best solution to get the original functionality back is that - https://youtu.be/gTNgU_PKNvg
If you want to understand the new functionality & get an approximate equivalent to the original functionality, see below:
It's painful - but the TL;DR of a bunch of these replies is this...
- Locate "navigation type" in your settings (use the search feature within your settings).
- Set to "swipe gestures".
- Leave Assistant App & Circle to Search enabled.
- To view recent/running apps, swipe up from the bottom of the screen & pause briefly after swiping, before lifting your finger - this will bring up the recent/running apps.
- The "back" gesture is to swipe in from either edge of the sides of your screen - swiping left from the right edge or swiping right from the left edge is the "back" gesture.
- Swipe up without a pause to go back to your home screen - simply swiping up is the "home" gesture.
- Pressing and holding on the little bar/line at the very bottom of the screen will bring up the "Circle to search" feature.
- Swiping up from the VERY bottom left corner OR the VERY bottom right corner (absolutely in the actual corners, not just to the left or right) will bring up Assistant.
