Can you elaborate as to where your seeing these options at the bottom of picture's @Fucu

The 'T' in the bottom right of your picture is the 'Extract Text' feature, @Fucu, so if an image has writing included, you can copy text from it using the 'T' option. You can tap anywhere on the screen to hide this along with all the options at the bottom of the screen.

As previously advised, @Fucu, the "T" can be hidden when you click on any pictures you view on the Gallery app. However, this is simply the extract text feature and won't show when there is no text evident within the picture/photo.
Further, to reassure you, the "T" is not attached to the photo itself, so will not feature if you were to print or share any of your Gallery photos/pictures/screenshots. Feel free to test this out.
The recognition of text is an aspect of the software and cannot be disabled at this time. It is an intentional feature.
