In the new one ui 6.1 making a lot of problem.. The always on display is now not editable, and brightness too so i can't see anything.. on the keyboard the searching gif is now not awaible, the translator not support my language so i cant use it now in the past i can use google translator, now it's not an option.. Can i go back the old One UI?

In short, no you can't roll back to the previous Ui if you could then you'll find a lot doing so.

You can't roll back to the previous UI, however there is a workaround for your display issues. Go to the Galaxy store and download the Good Lock app. Install the LockStar module and it will give you a brightness slider for the AOD. You can also explore its other customisations.

Google translation is still available to you if you use the Samsung keyboard.
Settings>general management>Samsung keyboard settings>Translation. Toggle on Google.
