@BlueDay: When creating a custom sticker, the feature will select the most prominent item/subject in the image automatically. As a possible workaround, rather than entering the editing suite to create a sticker, head to the Gallery app > Select an image > Press and hold on the item/subject that you would like to create a sticker out of > A Circle will expand on the screen to show that it is working > Select 'Save as sticker' via the pop up menu.

Another approach you can try is selecting the image you'd like to turn into a sticker > Tap the pencil symbol at the bottom of the screen > Tap the 4 circles in a square formation > Lasso > Select manually > Draw around the area you'd like to make into a sticker > Next > Adjust the colour and border thickness > Done > Tap the 3 dots in the top right > Save as copy.
Now, select a different image (one you'd like to add the sticker to) > Enter the editing suite. Now, when you go to make a customer sticker, select the recently edited option, and this should hopefully select all of the image, rather than a portion of it.
