Water damage and sim card

My wife dropped her old S8 into water.
It is dead.
She was about to replace it anyway so a new S21FE is on it's way.

What are the chances her current SIM card will work?
Is there a risk that putting it in the new phone could damage that?

It would make the process easier and quicker if it worked

It should not affect the SIM card
Though with a SIM card that I'm assuming is a few years old.
Be advisable to get a newer version SIM card anyway.
Your network provider should be able to furnish you with a new one.
But the old one should still work

My old S6 ended up in the washing machine, sim was fine but phone wasn't.

Regarding the SIM card, I'd say there's a decent chance it might still work. Electronics can be surprisingly resilient sometimes, but water damage is always a bit of a gamble. Before trying it in the new phone, I'd suggest gently drying the SIM card off and maybe even giving it a quick wipe with a soft cloth. If there's any visible damage or corrosion, it's probably best to get a new one just to be safe.
