Does anyone have know if S21U is going to get the 6.1 update and if so when?

No official date as yet. I'm sure it will be getting the 6.1, but probably without some of the AI features

Yes, and forecast for Q2 2024 but not definite (Samsung rarely release dates).

But, no to the AI elements.

The S22 series hasn't even got it yet. Hasn't been confirmed if these phones will get it.
