Eyes dark on S21+ camera

Always had this issue, finally asking for help:

When I take pictures of blue eyed people they always come out looking just blackish.

I've tried swiping the exposure all the way to the right and then the eyes show up, but then other brighter objects get washed out and it also resets after a few seconds. Flash does not help with this and is a pain for snapping quick pics. My daughters don't sit still. Help!

@Aje2: Are you using Photo mode in the Camera app, and is there plenty of light in the scene when you take the photo? Also, if you take a close up photo of the subjects face, does the issue persist? 

For natural results when taking photos, please tap the 2 overlapping squares in the top right of the Camera app, and make sure that the filter is set to 'Original'. Also, tap the Back button and make sure that 64MP is selected at the top of the screen, as this will allow for high resolution pictures, which should hopefully capture the details of the scene/subject more clearly.
