Hi there, @Fab120. That's very odd. Have you checked to see whether there is a software update for your phone, and have you also checked the Galaxy Store to see whether there is an update available for the AR Emoji Sticker app?
If there are any updates, please download and install these and let me know whether this resolves the error.

Thanks for checking that, @Fab120. Just so I have a clearer idea about when the app stops, please can you let me know when exactly you encounter this?
For instance, does it happen as soon as you open the Camera app, or is it when you are trying to use a particular feature?

In that case, @Fab120, I'd recommend Wiping the cache partition on your phone:
https://www.samsung.com/uk/support/mobile-devices/how-do-i-clear-the-cache-on-my-device/
If this does not resolve the issue of your AR Emoji Sticker app stopping unexpectedly, the next step would be to pop your S21 into Safe Mode. This will disable any third-party applications, so that you can determine whether these are causing the issue.
To do this, please press and hold the Power button until you see Power off, Restart and Emergency > Press and Hold the Power Off icon until it shows a Shield > Tap the Shield. After this, the S21 will start in Safe Mode.
If the issue does not occur whilst in Safe Mode, then it suggests that it is being caused by a third-party app. To resolve this, please exit Safe Mode, then begin uninstalling apps you've downloaded one by one (restarting the phone between each app uninstallation) until the issue fixes itself.
Once you've identified the troublesome app, you can reinstall the other apps via the Galaxy/Google Play Store.
Please let me know how you get on with this.

I tried this for the jumping screens while typing on a A52 5G and it seems to do a good job for the emojis as well. Perhaps this is something that may help you:
Under Settings > General Management > Samsung Keyboard settings (on top, it will read Samsung Keyboard) > Reset to default settings > Reset keyboard settings
This took care of my A52 5G during the second last install. Now, January 23, 2023, I got another install and the same story repeated. I know, this is very frustrating and annoying. Now, if you think positive, you just found the solution to this and also likely to your emojis not showing up when they should. Have a blessed day and see if you can help someone else with this knowledge. I hope this does not create any issues with your already existing settings. I suppose this may be an insignificant price to pay in the name of sanity.
