Wife's iPhone seems to be fine though. May e it's just something they're doing to Android phones.🤦🏻♂️🤷🏻♂️

Hi there, @ScouseBiggy11. That's odd. Were you getting the WhatsApp notifications on your S21 just prior to updating the app?
Which changes (if any) did you make to your phone or the app before this issue cropped up?

I then went on using my phone as usual and I hadn't noticed anything until I accidentally pressed WhatsApp, instead of my football scores app and there was a few conversations with messages that I wasn't aware that I had.
I checked to see if there was any other update from Samsung and there wasn't. My WhatsApp is up-to-date as well.
When I checky WhatsApp settings, it says that pop up bubble are no longer supported on your version of Android.

After I click learn more, it takes me to this page and here it says above android 9 is supported. 🤷🏻♂️

Ah, yes, I see what you mean, @ScouseBiggy11. If you hover over the greyed out Popup notifications options (illustrated in your screenshot), and click "Learn more", it will take you to a WhatsApp FAQ answer.
This gives various suggestions about customising your notifications but, oddly, doesn't seem to explain why the popup notifications aren't available.
