@KerryA: This can vary depending on your current Android version, but please head to the Gallery app > Tap the 3 lines in the bottom right > Recycle bin > Press and hold on a photo, then tap on any others you'd like to include, or tap on 'All' in the top left > Restore all.
If this isn't applicable then please confirm your model number and current Android version (located in Settings > About phone/tablet) and I will look into this further for you.
