Google assistant using Bixby Voice volume

I'm trying to use google assistant with my car over bluetooth, however since Google assistant uses Bixby voice volume instead of multimedia volume no audio can be heard from the car.

 
I tried uninstalling bixby updates, disabling it, uninstalling it entirely using adb, but google assistant still uses Bixby Voice. Is there any way to force it to use multimedia volume?
 
I could even use external apps to redirect the audio if they exists, I just want it to work.
 
Please don't just respond to this with the standard copy paste response.
 
Edit: I should probably mention that I'm using a samsung s10e

Could you try giving Google a command that triggers a lengthy output, e.g. the weather for the next few days or something. 

As soon as it should be starting to talk, hit the volume up button.

In an offline test this gives me access to Bixby volume, despite Bixby being disabled.

That's exactly my problem. Google Assistant speaks with the Bixby Volume,  while my car only listens to multimedia and call volume so I can't hear the assistant speaking
