Since the update apps have stopped working and mobile data is completely gone

Absolutely flabbergasted... No mobile data and apps no longer working on a phone that cost over a grand.
Fuming. 
Can you unravel an update?
Are Samsung aware?

What have you carried out thus far in regards to troubleshooting @uniquegirl 

Which update was it ?

I recently conpleted the new update that included Samsung One Ui 4.1 and all is fine on my Samsung Galaxy Z Fold³.

The first step in troubleshooting is > https://www.samsung.com/uk/support/mobile-devices/how-do-i-clear-the-cache-on-my-device/ You may need to hook up to a Computer or insert your earphones to enter into recovery mode. 


Daily Driver > Samsung Galaxy s²³ Ultra 512Gb in Phantom Black.
