Have had a Fold 5 for last couple of months...have been slowly transitioning from iPhone. I had the phone all set up nicely, in order & some folders. No idea what happened but overnight everything changed. All apps still seem to be there but everything was all rearranged, most folders had disappeared altho the apps that were in them were still on phone, even the phone/messages/whatsapp widgets? had disappeared from the bottom of the phone. 

I am frustrated as I thought I was getting more used to it for the most part...can anyone tell me what happened & how to avoid this in future?

Oh no. Assume you mean the icon layout on the front and inner screen.

It should not happen randomly, but you can pick the screen and access the home screen setting, best if you can't figure out what went wrong is to start over, when done, select the lock home screen layout

so you haven't heard of this happening? possibly after an update or something?

Could not honestly say no, but I have owned Folds for nearly 3 years and not experienced, always seen it as requiring manual intervention.

I think the inner to outer screen needs locking once you have what you like, if not a change on one affects the other.
