Your device should have already received the UI 6.0 update last year, along with the December security patch, as you say.
Your device is also eligible for the UI 6.1 update. It was released back in March / April I think (timescale dependent on carrier).I can't remember if it was delayed, though.
Your device is also eligible for monthly security updates.
You say you're in the UK, but is it a UK handset?
Please post a screenshot of your CSC code by going to settings >about phone >software information. Scroll to Service provider software version and take a screenshot.
Also, advise which country you purchased device from and from whom.

Vodafone do hold back software updates for testing @ctrl_shift ,however you should have the most up to date software on your phone.

You could also try Samsung SmartSwitch.
Sometimes taking out the sim and re inserting it can invoke an update. That or pop another non Vodafone Sim Card in.
