Obviously that's not how mobile data is meant to work on your phone, so something is definitely causing a hiccup with your setting.
You can try resettings your network connection via Settings > General Management > Reset > Reset Network Connections > Turn your phone off and On.
Can you tell us if you have performed any troubleshooting steps ?
Also if you try your sim card in another phone what happens then 🤔
May I ask does this issue happen everywhere or in a particular area ?

Hi Band of brothers thank you I did a restore and a partion cache but every day when I’m out I go to use my phone and says off line I then have to go into sim services and turn mobile data on sim 1. I only have 1 sim x

Hi, @Allysisa. In addition to what you've already tried and what's been suggested and asked by @BandOfBrothers and @Piper123, have you also removed and reinserted your SIM card to see if that helps?:
I appreciate you're probably well aware of the process, but I added the link for the benefit for anyone else who might not be so sure and might need to remove the SIM card.
To @Piper123's point - you may wish to verify whether you have a Mode or Routine toggled on. To do this, please go to Settings > Modes and Routines > Click on Modes at the bottom (to see if any Modes are set to run at particular times, under certain conditions, or in certain places) > Click on the Routines tab and do the same.
If you notice anything related to your Mobile data connection, you may wish to modify it via the aforementioned Modes and Routines menu.

Do you have another phone to try your sim card in is what I meant.
This is a process of elimination to rule out a sim card issue or phone issue.
