Is there a jack plug adapter you can purchase to enable use of 3.5mm jack earphones for the S24 Ultra like you can get for iPhone that plugs into the charging port?

Yes there are. Some work great. Some not so much.

Would suggest Bluetooth ones though as that's the future.

Plenty out there, although you can't buy official one from Samsung website no more, you can check anker ones they are quite good, also make sure it has DAC (Digital to Analogue converter) built in.

Yes you can find them online at places like Amazon etc. Would echo what GoanGeek said and read the reviews carefully first.
You can get them with a splitter too so you can charge the phone through the USB-C side at the same time as listening to music on the 3.5mm connector. The ones I've seen only permit charging and not data transfer from the USB-C connection.
