I got One UI 7 on my Galaxy S24 Ultra and I hate every single change. It is such a big drawback for me, that it's almost a showstopper. I used Galaxy S phone since the S III and I have never been so disappointed.
Is there a way to remove this mess and go back to the previous UI?

Wrong, stop spreading miss information about the ability to downgrade.
As long as BIT is the same you can downgrade as I have and others on multiple devices.
The only risk is ignorance and custom ROM's are not required, official samsung FW is used in the process.
I will continue to correct the ignorance in this thread. I will not mention the tool name out of respect for the Moderator.

Your statement is riddled with inaccuracies, which is either ignorance or a shil for a corporation. No one comes to a forum looking for help to have someone read off "legal words from Samsung"

I have an S24+ which was recently forced updated to One ui 7. The features are terrible and my phone now operates and resembles an iPhone. I purchase android phones as I hate iPhone. Now reviewing all the new features samsung has forced complete integration of AI. There is no way to uninstall or remove these features to secure my data. Disabling appears to only hinder AI operation a tiny bit. Security appears to be an after thought as AI requires sending your data unsecured to another location for processing and storage. I would have never upgraded or even bought this phone a year ago had I know data theft would be this bad. I'm not waiting for the next upgrade in a year which will only make AI worse for data privacy. I want a full refund for my device or a software roll back

Settings, galaxy ai, disable everything if you really want to.
If you care about privacy, enable "process data only on device" so your data never leaves your phone. Enabling that will also disable any ai features that cannot run on your device without using samsung servers.
So to counter your points.
Most of the ai features only run when you tell them to. If you never use them they never do anything or send any data anywhere. Eg, ai spell check and image generation never do anything unless you press the button to use them.
When AI uses a server, it is secured in transit, secured on the server and wiped when the server finishes using it. No clue where you got unsecured from, it is definitely secure. Could the server itself potentially be hacked or store things? Maybe, but you can use process data only on device to never use samsung servers.
There is no data theft, you are told exactly what each feature does when you enable it. Don't enable what you don't want to use. For the s25 series, samsung literally created "personal data intelligence" which is a software system that keeps all the ai learning locked to your device in a way it cannot leave.
Ai when ran locally on your device is fully private, even works without Internet. When using a server, yeah potentially not private but you can again process on device.
