Are they Wear OS watches?
I have a Watch 5 pro and it is working fine with the S24 Ultra. I failed the transfer initially, but after transferring back to the S22 Ultra and re-transfer to the S24 Ultra, all is working as intended and did not have to reset the watch.

I'm wearing a Classic Watch4 connected with my phone with no issues.
I did have a recent issue with that watch and the Lock screen battery widget, but that issue has since disappeared.
What watches are giving you problems?

Yes unfortunately my Samsung Gear s³ Frontier Watch is not supported by the Samsung Galaxy s²⁴ Ultra 🤔
It's inevitable that at some point older tech / devices will become unsupported I guess.
I knew this via doing my due diligence before buying the Samsung Galaxy s²⁴ Ultra.
I already had the Samsung Watch⁴ Classic which I now use for work.
And as Samsung were giving 30% off the Samsung Watch⁶ Classic if bought alongside the phone I treated myself to that one to use for when I'm not at work.
I bought my phone and Watch from Argos UK.
Argos gave 25% off the watch but I could pick them both up at the same time so I went with that.
Daily Driver > Samsung Galaxy s²⁵ Ultra 512Gb ~ Titanium Black.
The advice I offer is my own and does not represent Samsung’s position.
I'm here to help. " This is the way. "
