May I please ask (and sorry if it is a stupid question but I'm good at those), where you say you've turned the countdown off, where exactly?
On the screen, at the top, there is a countdown timer option there. Is it set to 0?

Hi, @amyleigh2610. In addition to what's already been suggested and what you might have already tried, please can you let us know whether resetting your Camera app's settings resolves this for you?
To do this, please open the Camera app > Click the gear icon on the top right > Reset settings > Reset.
After doing this, please see if the issue persists (or if the timer stops appearing).
