This a quick post to get peoples' opinions, hopefully, possible solutions and to spark a conversation about why this is.
My first thoughts:
After owning a Note 10+ since its release (almost 4 years ago) it has always had an incredibly impressive camera. This natrually led me to compare it to my new S23 Ultra, which I only upgraded to due to the Note 10+ needed £250 worth of repairs. Don't get me wrong, the specs of the S23's cameras are definitively better in every category, and the new zoom lenses crush the Note 10+ in pretty much every single way. The primary camera, however, does not follow the same trend.
Comparisons:
At first glance, these photos seem fairly similiar. The S23 Ultra has a slightly wider view and also a boost in saturation.

As soon as you zoom in however...
You can see that the S23 Ultra starts to fall apart. No matter where you zoom in, the photo looks like an oil painting. There is so much processing going on it just ruins the photo. Its absolute night and day.

Final thoughts:
I do not know what is causing this. I have tried turning scene optimiser on/off, I have fiddled with almost all the settings and I cannot get results even close to that of the Note 10+. Obviously, boosting the quality to 50 or 200mp on the S23 Ultra elleviates these issue as the sheer resolution then pushes the need for all this processing away. This is not a fix for this issue however, as the file size is quite frankly a waste of storage and the camera is so much slower to opperate when in these modes. Anyone would guess that these photos were the other way around!
My guess:
This issue comes from poor software when combining the 200mp into a 12mp image? I would welcome for someone to show me a fix or prove me wrong, it is a bit annoying spending £1000 on a new phone only to be outperformed by a 4 year old product, despite it being so exceptional at the time of release.

Thank you for your reply, I do indeed use Samsung's camera assist and it is set to medium the sharpness is fine, its the overall quality of the camera which is at issue here, and before you say it, its not the user:) before I posted here I seeked out advice on getting the best out of the camera from numerous websites but to no avail

I sympathise with you Jonny. I, too, am extremely dissapointed with the samsung galaxy s23 ultra camera. I have done alot of research on how to fix the very poor quality images. And unfortunately, it does not help.I v tried all the setting adjustments, and still very grainy and noisy, and blurry images when you zoom in. Iv learnt in this community, it's the phone's processing. It's extremely dissapointing. I can't return my phone, as I'm past the, 'change of mind' period. I bought it early this year, 2023. The over saturation is also built into the camera. I don't see contacting Samsung will be of help either. I am a photographer, and I guess I will not be using the phone camera. And I will think twice about getting another samsung phone.

I fount myself in the same spot nowadays. I made a lot of really good pictures with note8 and 9. Sadly it was not waterproof after battery replacement and due to me being super smart i decided to make few underwater shots in croatia...
Here comes my disappointment on S23. Obviously zoom is superb to note 8/9 but image quality... I found processing destroying all the details on the picture. It is heavily processed which is visible in almost any conditions. I wish i could take raw photos without processing- but unfortunately even RAW files contain image processing!. This is so disappointing.

And 4k in 1x video is pure *****.
The worst thing about all this is that it can be fixed by software.
And since they are in their total refusal to accept that they have unfortunately poor and bad software. We who have paid a lot of money for a product that has been deceived by giving misleading advertising. We suffer the consequences.
They should leave options to choose from. There will be someone who likes and who not.
I also have a Note 9 and the same thing happens to me as you with the s23 ultra.
No more Samsung phones. For not listening to their users.

Once, I came across a Reddit community dedicated to the Galaxy S24 Ultra. In that community, they were lying and deceiving potential buyers. Almost every post there claimed how amazing the Galaxy S23 Ultra’s camera was, even though it’s a complete lie—the camera system is terrible.
I decided to share a link to our discussion here in that community to somehow let people know the truth. I simply copied and pasted the link under all the deceptive posts. And guess what? I was immediately banned, and Reddit’s administration even threatened to permanently suspend my Reddit account!
