Just chiming in here because I was in the exact same situation after updating to One UI 6.1 on my Galaxy S23+. I expected Portrait Studio to be front and center under Photo Assist, especially since Samsung’s own support page suggests it should be there. But like you mentioned, it’s missing even under Advanced Intelligence.
From what I’ve gathered (and experienced), it looks like Samsung is rolling these AI features out selectively, depending on both region and device model. A friend using the Z Fold5 already has access to Portrait Studio, but on my phone it’s still not showing even after checking Gallery > Edit > AI icon like someone suggested above.
One workaround I found helpful is to explore third-party tools while waiting for Samsung to fully release the feature.
