Some updates are small stability fixes and some are larger files that include new features or enhancements to existing one's @Aklima
The larger main updates typically include security updates too.
The fact with Android is that it's open source with Samsung One Ui on top so Samsung I assume will always be testing what's out there already and may sometimes find that an update that's sent out causes conflict for some so they then need to try and resolve that or enough people have sent feedback via their Samsung Members App about a conflict so they then act sometimes via an update.
