Anyone know if i can get the beta for one ui 5 in uk now s20 ultra 5g

If its available for the phone. You will see a notification in the Members App
If you don't see it, and it's available for that range of phones.
Then it's likely that the phone was supplied by a network provider. These phones normally have network optimisation software on them, so won't be eligible.
The Beta program is open for unlocked phones only

But this will be an unlocked phone

So it was obtained through EE, or a provider that uses EE network
This will have service provider software optimizations and wouldn't be eligible for the Beta program unfortunately
You'd have to wait for the general release software to come out
Even though you can use other SIM cards in it. It's kind of unlocked, but not fully
