@CeceOneA lot of these points have already been resolved/answes. I understand not liking change, but it's inevitable. I would watch videos to get a better understanding of your device and the newest UI 7. Please also note that some changes are made by Android—so all devices besides iOS—so personally, I would learn and master the new UI 7. But remember, you're not alone, and there are many people to support you.
Firstly, these forums.
If you swipe down from the right, click the little pen icon in the top right to enter edit mode. In the top left, you'll see panel settings; here you can change your quick panel from "separate" to "together."

Samsung also offer something called smart turor- where staff will sit with you and help you with anything you need on device.
