Where are Samsung Notes kept?

Sat on my Galaxy A10 and broke it, mostly.  Still boots up, but virtually impossible to operate.  Some, but not much at all.

Got a new A10s, inserted my sim, went through the setup, etc.

Now, I look at my old phone and see the Notes still there.  I have disabled wifi, turned off mobile data, turned on Airplane mode, everything I can think of to "disconnect" the old phone from the any online connections.  And still, my Notes appear there!!!

I haven't been able to access them through Samsung Cloud on my new phone.   So it makes me think they are stored in the old phone itself.

I really want to retrieve them, but how?  Are they on the old phone somewhere, encrypted or something?
