@josh97: Is the issue persistent in all locations, or just certain ones? If you head to Settings > Connections > Mobile networks > Network mode, is this set up to automatically connect to the strongest available mobile data signal in your area?
If you are referring to the Mobile data status in Settings > About phone > Status information > SIM card status > Mobile network state, then this will only show as 'Connected' when you have enabled Mobile data on the device. While you're here, check your Network and Service state to ensure that your network is registered, and is showing as 'In service'. You may also wish to try restarting your device to address any temporary performance issues.

@josh97: It's strange that the 'Network mode' option is missing from your settings. If you head to Settings > Connections > SIM manager, is your preferred SIM toggled on, and set to Mobile data? If you head to Settings > Device care > Maintenance mode > Turn on > Wait for the device to restart, then head back to Settings > Connections > Mobile networks, is network mode available?
To exit Maintenance mode, swipe from the top of the screen to the bottom, and tap on the notification to explore your options. Alternatively, head to Settings > Device care > Maintenance mode > Turn off.
