Does updating my software reduce my camera quality?

No it doesn't.
Software updates will contain various things like bug fixes, security patchs and Software updates. Some will contain Software upgrades as well with new features etc
Occasionally you can get a bug after an update, which normally gets fixed quite quickly.

Problems can arise if apps haven't been updated for a while or the app developers haven't updated on their end
Occasionally if a phone is a bit older, you can get issues with old cashe data.
But wiping the Partition Cashe can help fix this
