I am also having the same problem after upgrading to UI 6. Very frustrating .. hope a fix is available soon.

I managed to get it to work. The trick is to turn off automatic date and timezone and to set the date somewhere in 2023.

Ok, I've been having problems with this and it was driving me nuts. This kind of stuff should not happen. It's now fixed.
Go to your phone's date and time and disable automatic time adjust.
Set the date to Dec 2023
Keep it on that date.
Set up the watch if you've factory reset your watch (which I did). The galaxy wearable app should work now. It only worked when I opened the app in the old date.
Once everything is up and running again, change the date/time back to auto.
Such a stupid issue and it sucks for all the people who won't be able to figure this out.
